Chicken...Butter?

Did you know that the chicken fat skimmed off of broth makes an excellent butter substitute called schmaltz? We have used it 1:1 in cookies, pies, and other treats.
Ingredients
- Pasture Raised Chicken
Directions
- Make a homemade batch of chicken broth (without seasoning, just use chicken and water)
- Strain broth for other uses.
- Scoop separated chicken fat (schmaltz) into jar and put in fridge.
- Use like butter once hardened!
Notes:
While it may smell a little bit chicken-y, once cooked it no longer smells or tastes like chicken.
If you don't plan on using it soon, schmaltz freezes really well.
If you don't have enough schmaltz, you can always use it for half the butter called for in a recipe.
